A New Take on Morning Overnight Oats

A couple of months ago I bought mason jars because my husband (AKA Dad) started taking stomach medicine and needed to wait twenty minutes. My husband didn’t like the idea of mason oatmeal. He looked over my shoulder on all the ingredients I put in the mason jar. I was nervous about daddy giving a chance on the breakfast.

Original Overnights I first made:

  • 16oz Mason Jar
  • Put about 1/2 cup of old fashioned oatmeal
  • Dash of cinnamon and vanilla
  • 2 teaspoons of light brown sugar
  • 1 tablespoon of any kind chocolate chip
  • 1 tablespoon of any kind chocolate powder
  • Fill the 16 oz container with mixture and the rest with milk
  • Shake and refrigerate overnight

I made three jars. One for CJ, one for daddy and one for me. This happened for a couple of weeks. In making this oatmeal CJ helped and daddy. Then it three jars, two jars, and one jar. If I didn’t make breakfast daddy and CJ helped to make breakfast. I started to get tired of doing it everyday. Then I went to Pinterest where I browsed recipes and saw a new spin on overnight oats. I found a recipe of baked oatmeal muffins. My next part of the found oatmeal recipe was to go to the grocery store and buy the ingredients I needed to create the recipe. The cook supplies and ingredients are as follows, but first make sure you can get out the muffin tin and muffin paper cups. Then spray both muffin items because if not then heavy dish washing is because of not spraying those items. You should also grab the old fashioned oats, cinnamon, vanilla, chocolate chips, strawberries, honey, two thawed frozen bananas, and baking soda and baking powder. On no I forgot one more ingredient and its an egg to bind all these ingredients together. Then grab two large bowls to make this recipe. I made a mistake by putting the large bowl for dry ingredients and a small bowl for wet ingredients. In making the recipe I was supposed to combine the dry ingredients with wet ingredients. The small bowl I put the wet ingredients into and I forgot I had to put the dry into the wet. I tried my best but I should have used big bowls. Another mistake I made was a tablespoon rather than ice cream scoop to portion the twelve muffin cups equal, so every muffin was uneven. The muffins didn’t quite get all the ingredients in the cups. Daddy helped to put the muffins int he oven and washed the dishes. Then I grabbed a knife and started to slice the strawberries. Here are the ingredients of the muffins I made to change the overnight oatmeal.

  1. Grab the frozen thawed 2 bananas and mashed the bananas
  2. Pick the reddish and soft strawberries that would go bad if not used. Those strawberries are the sweetest ones. I slice the strawberries but cutting it into smaller ones are the best way to go
  3. I added a splash of cinnamon and vanilla with the wet ingredients
  4. Squeeze the honey jar and get 1/2 cup to put with the wet ingredients
    • In order to get the honey spray a 2 cup measuring cup with baking spray to get the honey from the measuring cup into the wet ingredients
  5. Crack an egg to put the wet ingredients
    • This part became tricky because the wet ingredients bowl was too full. It is why a big bowl was needed
    • Also crack and beat the egg in a separate bowl. This makes sure the egg covers everything
  6. in the dry bowl combine:
    • Two cups of old fashioned oats
    • 1/4 cup of chocolate chips
    • 1/4 teaspoon of salt
    • 1/2 teaspoon of baking soda
    • 1/4 teaspoon of baking powder
  7. Mix the dry ingredients together
  8. Hope and pray to gather the dry ingredients to go in the small bowl of wet ingredients
  9. Mix both ingredients until you are sure they are combined
  10. Grab a tablespoon and put the muffin mixture into the muffin cups
    • It is best to use an ice cream scoop then a tablespoon to get the mixture to equal parts
  11. Preheat the oven to 400 degrees. Then depending on the oven to preheat can take any time up to 15 minutes
    • While this is happening I clean up the mess I made to make the oats with fruit
  12. The oven is at 400 degrees put the muffins in and set the timer for twenty minutes
  13. When the muffins are done put on a dish and take a picture of your masterpiece
  14. wait ten minutes and try one of your masterpiece to see if they are cooked and taste good
  15. Put the pate of muffins in the fridge for the next day breakfast. Now fast forward to the next day and have CJ and daddy eat for breakfast. CJ tries it and told me I need to add more flavor. Daddy tried it and said delicious. I tried it out and loved it so much that I am going to play around with add-ons or new ingredients. The reason I am making breakfast is to stop from eating out or unhealthy breakfast that would not be feeling hungry after an hour. Plus I am going breakfast recipes to cut down on sugar and stop the progression of bad cholesterol. I also found out that I enjoy cooking for my family than just not doing anything to be part of my family Please try the recipe or play with the recipe to suit your needs for breakfast.
